The TLT aka Tofu, Lettuce & Tomato Sandwich
Move over BLT, it’s time for the TLT (Tofu, Lettuce, Tomato) to shine! Serve with crispy fries and pickles; this sandwich with spicy peri-peri tofu will have the most loyal bacon fan coming back for more.
INGREDIENTS:
Peri-peri marinade (can use store bought or following recipe)
¼ cup paprika
2 tbsp dried chilli flakes
1 cup fresh lemon juice
3 cloves garlic, minced,
1 ½ tsp chopped fresh ginger
1 ½ tsp salt
500g Pureland Organic Tofu
4 tbsp Kingland Soy Mayonnaise
8 slices bread, toasted
2 Tomatoes, sliced
1 Avocado
Lettuce
Dijon mustard
METHOD:
Slice tofu crosswise into 4 pieces to make tofu steaks.
Combine marinade ingredients and marinate tofu overnight.
The next day, grill or bake tofu in a 200°c preheated oven. Cook for 20 minutes.
Spread avocado onto toast, top with lettuce, peri-peri tofu and tomatoes. Spread soy mayonnaise and Dijon mustard onto other half of toast and place on top of sandwich.
Cut in half to serve.
